Creamy green beans and local-style samp soup

A comforting, farm Tuesday dinner

* 60g Butter * 1 Medium size onion, thinly sliced * ½ Bunch Spring onions
* 1 Tsp. Garlic, minced * 300g Frozen McCain Sliced * Green Beans * 1 Tsp. Thyme * 2 Cups Vegetable stock * 2 Cups Boiled samp * 1 Cup Cream * Salt and pepper to taste
Boil the samp until soft, drain and set aside.
Bring vegetable stock to heat and set aside.
Sauté the onion in butter over a medium heat.
Add spring onion (use white and green) and garlic, then cook further for a few minutes.
Add frozen McCain green beans and thyme. Cook until tender.
Add vegetable stock and cook until green beans are soft.
Skim off any scum.
Take off heat and blend if a smooth soup is required or leave if a chunky soup is preferred.
Add samp and cream and bring to heat.
Season to taste.
